Banana Chocolate Chip Muffins

  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup vegan butter
  • 3 ripe bananas mashed
  • 1/2 tsp baking soda
  • 2 cups of flour
  • 1/4 cup unsweetened almond milk 
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 bar dark chocolate broken into chunks
  1. Preheat oven to 350 and line muffin tin with liners.
  2. In a large bowl mix together the flour, baking soda, salt, and cinnamon.
  3. Mix the butter and sugar and brown sugar together.
  4. Add the bananas, almond milk, and vanilla extract.
  5. Mix the wet and dry ingredients together. Mix well.
  6. Stir in the chocolate.
  7. Pour into muffin liners, 3/4 full. Bake for 20-22 minutes.
