Vegetable Pad Thai

I think it is safe to say that Thai food is my absolute favorite!  Before traveling to Thailand and introducing my palate to different curries, this was my Thai go-to dish!  It is still a fav of mine.  The mix of peanuts with the freshness of basil...topped with fresh squeezed lime juice... so so so good!

       Ingredients for the Sauce:

  • 1/3 cup vegetable broth
  • 3 tbs soy sauce
  • 3 tbs brown sugar
  • 3 tbs peanut butter-natural
  • 2 tbs fresh lime juice
  • 1 tbs rice wine vinegar
  • 2 tsp Sriracha sauce
  • 1 tsp fresh ginger
  • 2 garlic cloves minced

*Mix all ingredients together and then set aside.

                                             

Ingredients for the Pad Thai:

  • 1 box of rice noodles
  • 1 zucchini
  • 2 carrots
  • 1/2 yellow onion
  • 6 oz (1/2 container) of firm tofu 
  • 1/2 cup green onion sliced
  • 1/2 cup chopped peanuts
  • 1/2 cup cilantro chopped
  • 1/2 cup fresh basil chopped
  • 2 limes for juicing

 

  1. Cook the noodles according to instructions on the box
  2. Chop the zucchini, carrots, onion and tofu.  Stir-fry in pan with oil.
  3. When veggies are cooked add in the noodles. Stir-fry for a couple minutes. Add the sauce and green onions.
  4. Mix for a few minutes.
  5. Garnish with crushed peanuts, cilantro, basil, and fresh lime juice!
