Peanut Butter Flax Energy Bites

Peanut butter, honey, chocolate, coconut... how can you resist!  I was looking for a quick and easy energy ball to eat in the afternoon when I am starting to get HANGRY!  These are so filling and so healthy! ...oh and also, super duper easy to make! Bonus!

  • 1 cup oats
  • 1/2 ground flaxseed
  • 1/2 cup natural peanut butter
  • 1 cup shredded coconut
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1/2 cup vegan chocolate chips
  1. Mix together the oats, flaxseed, coconut and chocolate chips.
  2. Add in the peanut butter, honey, and vanilla.
  3. Chill in the fridge for 45 minutes
  4. Roll into bite size balls
  5. Eat!
