Pineapple Fried Rice

Christopher, my hubby, loves fried rice. I love pineapple.  This is an easy meal thats pretty nourishing.  We threw in lots of veggies and added some tofu for added protein!  

Ingredients

  • 4 garlic cloves
  • 1 red onion chopped
  • 3 cups cooked brown rice
  • 2 green onions chopped
  • 2 chopped carrots
  • 1/2 cup peas
  • 1/2 cup cubed tofu
  • 2 cups fresh pineapple chunks
  • 2 tbs soy sauce
  • 1 tbs sesame oil
  • 1/4 tsp white pepper
  • 1/2 tsp fresh ginger
  1. First mix together the soy sauce, sesame oil, white pepper, and fresh ginger. Set aside.
  2. Over medium heat, add the tofu until golden brown on each side. Remove and set aside.
  3. Next, add in the garlic and onion until soft. Next add the carrots and peas.  Give them the time they need to cook, about 5 minutes.  
  4. Next add in the rice, tofu, pineapple and green onions.
  5. Pour soy sauce mixture into the pan.
  6. Mix all ingredients and cook until warmed through.
  7. Serve and enjoy
