Pumpkin Smoothie

There are very few things that are difficult to find in The Netherlands...canned pumpkin being one of them...and pumpkin pie spice being another.  In order to make this smoothie I had my mom bring me some canned pumpkin when she visited this summer and I made the pumpkin pie spice on my own.  I still want to work on perfecting this recipe...  I am comparing it to Jamba's Pumpkin Smash that I used to get every fall while I was in college.  Jamba's was more like a milkshake so maybe they used frozen yogurt.  I will give that a whirl another time! I made this recipe post-workout- it was super delish, filling, and healthy! 

 

 

 

Ingredients:

  • 1/2 banana
  • 1/2 cup pumpkin puree
  • 1 cup vegan vanilla yogurt
  • 1/4 tsp vanilla extract
  • 6-8 ice cubes
  • 1 1/2 tsp pumpkin pie spice mix
  • 1/2 tsp allspice
  • 1/2 tsp nutmeg
  • 1 tsp honey

Combine all ingredients in a blender and mix. Topped with vegan whip cream and a sprinkle of nutmeg!

Pumpkin Pie Spice Ingredients:

  • 1/4 cup ground cinnamon
  • 2 tbs ground ginger
  • 2 tsp ground nutmeg
  • 1 tsp allspice

Combine in small bowl and store to use throughout the autumn season!
