Sun-Dried Chickpea Mustard Burger

Who doesn't love a good tangy burger!  It is always difficult to find a good veggie burger that's full of flavor and also satisfying.  For this recipe we focused on the tang coming from the mustard, the savory taste of sun-dried tomatoes, and used the oats to give it some heartiness.  This is our new favorite burger recipe! Add some avocado, lettuce, and tomato for garnish and enjoy!

  • 1 can drained chickpeas 
  • 2 garlic cloves minced
  • 1/2 cup finely chopped sun-dried tomatoes
  • 1 tbs dijon mustard
  • 1/2 cup diced red onion
  • 1 small grated zucchini 
  • 3 tbs chopped cilantro
  • 3 tbs red wine vinegar
  • 1 tsp cumin
  • 1 cup quick oats
  • salt and pepper to taste

 

Add all of the ingredients into a large bowl and mix with a fork. Form into patties and cook on stove top with some oil until both sides are a nice golden brown.
