Three Bean Salad

Beans are an awesome, awesome source of protein...mix in these other great ingredients and you have a super healthy snack, side dish, or even meal.  The dressing keeps it tasting fresh and it's even great to eat with some tortilla chips!

Serves 6

  • 1 can garbanzo beans
  • 1 can kidney beans
  • 1 can cannellini beans
  • 1/2 red onion chopped
  • 2 celery stalks chopped
  • 1 tbs fresh rosemary
  • 1 cup fresh parsley
  • 1/3 cup apple cider vinegar
  • 1/3 cup sugar
  • 1/4 cup olive oil
  • 1 1/2 tsp sea salt
  • Pepper to taste
  1. In a large bowl mix together the garbanzo beans, kidney beans, cannellini beans, red onion, celery, rosemary, and parsley . 
  2. Next, in a small bowl mix together the apple cider vinegar, sugar, olive oil, sea salt, and pepper.
  3. Combine the beans and the sauce. Chill in fridge until ready to serve!
