Tomato Pesto Sandwich with Toasted Pinenuts

Ingredients

  • 1 1/2 cup fresh basil
  • 2 large roma tomatoes
  • 1 cup roasted pine nuts
  • 4 garlic cloves
  • 1/2 cup olive oil
  • 1/2 cup nutritional yeast
  • 1/4 tsp salt
  • 1 tbs fresh lemon juice
  • fresh ground pepper to taste
  • Mixed greens
  • 1 Avocado
  • Cherry tomatoes halved
  • Sliced bread of choice

Instructions

  1. Combine basil, roma tomatoes, 1/2 cup pine nuts, garlic, olive oil, nutritional yeast, salt, lemon juice, and pepper in food processor.
  2. Assemble: Bread, mixed greens, sliced avocado, cherry tomatoes, and pine nuts.  Drizzle with pesto.
  3. Enjoy!
