My Story About Love...of Food, Travel, and My Hubby
Hello! I'm Elizabeth and I have been eating a plant based diet for twenty-one years. As a seventh grader in middle school I saw a video on factory farming and that was the last time I ate meat. When I was a senior I was introduced to soy milk, did some research, and decided it was time to go vegan. Since then I have become a health nut. I LOVE LOVE LOVE anything that has to do with food and nutrition! I could spend the day reading about how coconut oil helps ones immune system, how chia seeds are high in Omega-3s, or how bananas moderate blood sugar levels. When it comes to nutrition, I am in full nerd mode!
Why a blog?
Two years ago I relocated to Holland from New York, with my then fiancè, now hubby (we just got married last summer WOO-HOO!) for some adventure! We both love to travel and living overseas was on the top of my bucket list. When we moved here we were saving money for travel adventures and most importantly, our destination wedding in Cabo, Mexico. Who decides to move to Europe two weeks after getting engaged?! We did. Yup. To save money we decided instead of going out to restaurants regularly we would cook at home. We brought a few cookbooks from New York, purchased a few more here, and began cooking. Now that our wedding has passed we still prefer to cook all of our meals at home because we know we will have an awesomely delicious meal. It is also fun for us! We create our menu for the week together and decide which ingredients will go best together for each meal, go food shopping together, and then we cook together. In the kitchen we have had some of our best conversations, after all it is pretty difficult to chop veggies or make a roux with a cell phone in hand or computer on your lap. So we turn on some good music and get cookin! My husband (his name is Christopher) has taught me how to properly cut an onion, I have taught him how to knead dough, I have learned that he likes Sriracha sauce on everything (and I definitely do not) and he has learned that in order for me to enjoy an onion it must be finely chopped. We have both run to each other's rescue when we've accidentally sliced a finger instead of a vegetable. We have fun finding our way around the kitchen and our recipes together. As newlyweds we have found a love of cooking together and making delicious restaurant worthy vegan food. I decided to start this blog as a way to share these delicious recipes with family, friends, and others looking for great meal ideas. This also gives me an outlet for my my passion for nutrition. I always knew I would do something with nutrition and I finally found my platform! Now Christopher and I take the photos together and work on this blog together! All this fun saves us money for our travel so it's a win-win. Good food & travel...with the love of my life. Life is good. And delicious!
