Pineapple Fried Rice
Christopher, my hubby, loves fried rice. I love pineapple. This is an easy meal thats pretty nourishing. We threw in lots of veggies and added some tofu for added protein!
Ingredients
- 4 garlic cloves
- 1 red onion chopped
- 3 cups cooked brown rice
- 2 green onions chopped
- 2 chopped carrots
- 1/2 cup peas
- 1/2 cup cubed tofu
- 2 cups fresh pineapple chunks
- 2 tbs soy sauce
- 1 tbs sesame oil
- 1/4 tsp white pepper
- 1/2 tsp fresh ginger
- First mix together the soy sauce, sesame oil, white pepper, and fresh ginger. Set aside.
- Over medium heat, add the tofu until golden brown on each side. Remove and set aside.
- Next, add in the garlic and onion until soft. Next add the carrots and peas. Give them the time they need to cook, about 5 minutes.
- Next add in the rice, tofu, pineapple and green onions.
- Pour soy sauce mixture into the pan.
- Mix all ingredients and cook until warmed through.
- Serve and enjoy
