Pumpkin Peanut Butter Bites
Since Thanksgiving is coming up this Thursday, I wanted to make some festive energy bites to get me in the spirit! I found this recipe on Bless this Mess. The combo of pumpkin, peanut butter, and dark chocolate make these taste more like a treat than a healthy snack!
Ingredients
- 1/2 cup pumpkin puree
- 2 cups dry oats
- 1/2 cup peanut butter
- 1/4 cup chia seeds
- 1/4 cup honey
- 1 tsp vanilla extract
- 1/2 tsp pumpkin pie spice
- 1/2 cup chocolate chips
Mix all ingredients in a bowl. Roll round bites into the palm of your hands. Makes about 2 dozen bites!
