Three Bean Salad
Beans are an awesome, awesome source of protein...mix in these other great ingredients and you have a super healthy snack, side dish, or even meal. The dressing keeps it tasting fresh and it's even great to eat with some tortilla chips!
Serves 6
- 1 can garbanzo beans
- 1 can kidney beans
- 1 can cannellini beans
- 1/2 red onion chopped
- 2 celery stalks chopped
- 1 tbs fresh rosemary
- 1 cup fresh parsley
- 1/3 cup apple cider vinegar
- 1/3 cup sugar
- 1/4 cup olive oil
- 1 1/2 tsp sea salt
- Pepper to taste
- In a large bowl mix together the garbanzo beans, kidney beans, cannellini beans, red onion, celery, rosemary, and parsley .
- Next, in a small bowl mix together the apple cider vinegar, sugar, olive oil, sea salt, and pepper.
- Combine the beans and the sauce. Chill in fridge until ready to serve!
