- 1/2 cup brown sugar
- 1/2 cup sugar
- 1/2 cup vegan butter
- 3 ripe bananas mashed
- 1/2 tsp baking soda
- 2 cups of flour
- 1/4 cup unsweetened almond milk
- 1 tsp apple cider vinegar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 bar dark chocolate broken into chunks
- Preheat oven to 350 and line muffin tin with liners.
- In a large bowl mix together the flour, baking soda, salt, and cinnamon.
- Mix the butter and sugar and brown sugar together.
- Add the bananas, almond milk, and vanilla extract.
- Mix the wet and dry ingredients together. Mix well.
- Stir in the chocolate.
- Pour into muffin liners, 3/4 full. Bake for 20-22 minutes.
