Classic French Toast

Having just got back from a camping trip around Iceland, I woke up this morning wanting something warm, comforting, and sweet...something I could cozy up on the couch with my morning tea and listen to some music with.  This recipe is ridiculously easy to make and oh-so-tasty! I added some fresh bananas and topped with some maple syrup! Here's to summer vacation and french toast on a Monday morning!

  • 1 1/2 cups unsweetened almond milk
  • 2 ripe bananas
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 2 tbs corn starch
  1. Add milk, banana, cinnamon, nutmeg, vanilla, and cornstarch to food processor and combine.
  2. Transfer mixture to a large bowl. Dip slices of bread into mixture until fully coated.
  3. On medium-low heat cook bread until golden brown on each side.
  4. Serve with fresh fruit and maple syrup (of course!)
