Quinoa Bowl
OMG I love this dish! It is so fresh, so healthy, so filling! Yum!!!
Sauce
- 1 bunch fresh basil
- 1/2 cup walnuts
- 2 avocados
- 2 tbs lemon juice
- 1/2 cup olive oil
- 1 1/2 tsp sea salt
- 1/2 tsp ground pepper
- cooked quinoa
- 1 cup of halved cherry tomatoes
- 3 scallions sliced
- crushed red pepper flakes
- grilled corn
- avocado chunks
Sauce: Combine all ingredients in a food processor until smooth.
Bowls: Fill each bowl with quinoa and top with tomatoes, scallions, corn, avocado. Top with some sauce and sprinkle some red pepper flakes on top.
