Tomato Pesto Sandwich with Toasted Pinenuts
Ingredients
- 1 1/2 cup fresh basil
- 2 large roma tomatoes
- 1 cup roasted pine nuts
- 4 garlic cloves
- 1/2 cup olive oil
- 1/2 cup nutritional yeast
- 1/4 tsp salt
- 1 tbs fresh lemon juice
- fresh ground pepper to taste
- Mixed greens
- 1 Avocado
- Cherry tomatoes halved
- Sliced bread of choice
Instructions
- Combine basil, roma tomatoes, 1/2 cup pine nuts, garlic, olive oil, nutritional yeast, salt, lemon juice, and pepper in food processor.
- Assemble: Bread, mixed greens, sliced avocado, cherry tomatoes, and pine nuts. Drizzle with pesto.
